My name is Amber, and I am not Celiac. I have Celiac's disease, and it definitely adds a hint of adventure to life, but a few years into the diet I am happy to say it no longer defines who I am!

So, who am I? Well...I'm 29 years old, I love my faith, my amazingly supportive husband Brian, my family, my job (who wouldn't love designing wedding albums?!) playing basketball, decorating, reading, writing, and COOKING! (Give me my favorite pan and a delicious recipe and I'm happy for hours! Yes...I have a favorite pan...that's just the type of girl I am! Haven't named it yet, but ooooo...maybe I should!)

In Feburary of 2009, I was diagnosed with Celiac Disease, and I started a gluten-free diet in March 2009 (I spent the month in-between on the junk food aisle of every local grocery store... binging, binging, binging.) I choose to look at the diet as an adventure (I mean, getting to eat something called 'xanthum gum' on a regular basis is pretty cool, right?!), and am finding the adjustment a lot easier than I expected. There are hard moments...er...little adventures...along the way, but all in all, what a blessing to know what's wrong, and be able to fix it!

I started this blog as a place to archive all the great gluten-free information I come across as I go about my Celiac adventure (and to save my poor friends and family from having to constantly read about my latest and greatest gluten-free baking and shopping experiments on my normal blog. I mean, they are loving and patient, but I don't think a non-Celiac can quite understand the insane thrill of excitement that comes when the most beautiful words in the English language are found on the back of one of my favorite snacks....'Gluten Free'...sigh...). While I am NOT a medical expert (or an expert of any kind, really) I hope it will help someone else out on their journey!
